May’s Menu Plan

This is for those (two?) people who actually wanted to know what we’re cooking with our monthly meal plan. And it’s partially because I’m going to try that blogging once a day thing for the month of May…NaBloPoMo? As if. ;) But here it is anyway.

You’ll  notice many of them include a vague reference to “veggies” or “fruit”. That is because it will depend on what is available at the farmer’s market.

Breakfast:

Sunday’s (Brunch): Pancakes and fruit
Monday’s: Cereal (usually Joe’s O’s from TJ’s)
Tuesday’s: Peanut Butter Toast
Wednesday: Eggs and Toast
Thursday: Oatmeal with brown sugar and raisins
Friday: Fruit and Homemade Yogurt
Saturday’s (Brunch): Baked Goods (muffins, breads etc)

Lunch:

For Justin:
Week One: Potato Salad
Week Two: Pasta Salad
Week Three: Egg Salad Sandwiches
Week Four: Tuna Salad Sandwiches

For Zeb and me:
Monday’s: PB & J Sandwiches
Tuesday’s: TJ’s boxed Macaroni and Cheese (Shoot!! I forgot to get any!!)
Wednesday’s: Tuna Sandwiches
Thursday’s: Lunch at Great Grandma’s
Friday’s: Lunch at Gramma’s
Saturday and Sunday: no lunch due to late breakfasts and early dinners

Dinners: (ready for this?)

1st: Pasta with greens, tomatoes, herbs/spices and feta cheese
2nd: Grilled Cheese and Tomato Soup
3rd: Homegrown Spinach Lasagna
4th: Pasta with Broccoli and Alfredo
5th: Cinco De Mayo with Fish Tacos and homemade salsa
6th: Minestra Di Ceci (new recipe from my crock pot book!)
7th: Snobby Joe’s
8th: Arroz Con Queso (another new one from cock pot book!)
9th: Homemade Veggie Pizza
10th: Leftovers or Mother’s Day w/ family
11th: Tuna Wraps
12th: French Toast Sticks and fruit
13th: Crockpot Chili and homemade cornbread
14th: Baked Potatoes and Salad
15th: Quesodillas and Spanish Rice (need to find recipe)
16th: Eggs and Biscuits w/ honey and jam
17th: Hamburgers and Homegrown Salad
18th: Spaghetti and Garlic Bread
19th: Black Bean Tacos
20th: Ravioli and seasonal veggies
21st: Raw Tacos (avocado, tomato, veggies wrapped in greens)
22nd: Salmon and Rice Casserole
23rd: Western Omelet (another new crockpot recipe!)
24th: More leftovers
25th: Penne Alfredo with Peas and Salmon
26th: Stacked Burrito Pie (recipe from Family Fun mag)
27th: BBQ Chicken and Salad
28th: Seafood Pasta w/ veggies
29th: Cannelloni (another Family Fun recipe) w/ veggies
30th: Black Bean Soup in the crock pot (another new one)
31st: “Leftover Stew” (all the leftover veggies throughout the month get frozen, then cooked in a stew at the end of the month)

Wow. I feel so exposed.

    Oh my gosh! Perfect timing! I’m so unorganized in all parts of my life, I’m always running to the store (which I truly dislike) for something I need. Just this morning I was telling my husband that I need to make a meal plan so I can cut down on the going, going, going. I will start to work on getting my monthly meal plan ready for the month of June. Thanks again, Tara, for a bit of inspiration.

    I like how you don’t eat too much meat. I try to plan one meatless dinner every week, but sometimes it’s really hard to come up with something. I’ll have to steal some ideas! ;)

    Wow, girl, that’s one extensive meal plan. I use the “leftover” plan. I “cook” every couple days and we use leftovers for the next nights meal and for lunches. If we have roast on Wed, it’s shredded beef tacos on Thurs. We also tend to eat the same thing every morning (eggs for DH and I and oatmeal or cereal for the kids…occasional pancakes/waffles). I cook up a batches of pasta, rice, lentils etc. for side dishes through the week (always more than enough). I’m lucky though, my DH is a creature of habit and loves the leftovers!

    Hi,
    Just found your blog over at Not Dabbling in Normal. I left my job just about a year ago to be a stay at home Grandmom. I watch my 15mo old grandson full time and I love it. We’ve expanded our garden and are doing alot more “Green” things, I also feel alot calmer and centered. Love your meal plans, I try to plan our meals out also, I find I spend less $$ at the store.

    Yum, that’s making me hungry. The homegrown spinach lasagna, raw tacos and penne alfredo have really made my mouth water, but it all sounds delish. :)

  9. KPHS We try to only have have meat with dinner and only about 2-3x a week and red meat no more than once a week, but preferably less. RecipeZaar.com had a vegetarian search engine for meals and I have a good vegetarian family cookbook, although I’m too lazy to find it right now. I’m sure I’ll blog about it soon.

    I like the leftover stew idea! I am constantly incorporating leftover veggies into stews, soups, and casseroles. My teen doesn’t eat them plain, but he’ll eat them in these dishes.

    If I had to cook something totally different every night practically for a month, I’d die. Definitely, Definitely try making a larger batch of your dinners and try to have the same again or same again with a twist if not the ‘next night’, then the ‘night after next’. OR, make twice the amount, freeze it and eat the same meal the following week (if poss). The meals looked great though!!!!!!

    Awesome! I usually just do a week at a time. I’m impressed at the lack of leftovers, I always seem to cook for an army even though there’s just two of us – we seem to eat the same meal at least two nights in a row. Great planning!

    Thanks for this. I hope this isn’t too creepy, but I’m really lazy at meal plans so this month I just copied yours. Yeah. When you had burrito pie, we had burrito pie, and everything else- except for lunches and breakfasts. Just dinners- that makes it less creepy, right?

  15. LOL Not creepy but funny! We actually never made our burrito pie because my hubby broke my darn tortilla press. We’ve been modifying everything to try and find things to cook on the grill. The heat has been TOO much to cook indoors. I have plans for some easy-peasy recipes for June for you to copy. ;)
